Glutinous Rice Cake with Pandan and Palm Sugar
Ingredients
- 3 cups glutinous rice
- 2 cups coconut milk
- 1/2 cup water
- 3 pandan leaves
- A pinch of salt
- Optional: a little lime water
- Green food coloring
- Grated white coconut mixed with a little salt
Palm sugar syrup
- 1.5 blocks palm sugar
- 1 cup water
- 3 knotted pandan leaves
- A pinch of salt
Preparation
Wash the glutinous rice and soak it for more than 1 hour with a little green food coloring and optional lime water.
Blend the pandan leaves with 1/2 cup water and strain the mixture.
Drain the rice, place it in a pan optionally lined with banana leaves, add coconut milk, pandan water, a pinch of salt, and additional green food coloring if desired.
Steam the rice for 40 to 50 minutes.
Alternatively, steam the rice halfway, then wrap it in banana leaves, tie the ends, and steam again until fully cooked.
Allow to cool, cut into desired shapes, and roll in the grated coconut mixture.
Palm sugar syrup
Cook the palm sugar with 1 cup water and knotted pandan leaves until the sugar dissolves, then strain.
