Glutinous Rice Balls with Pandan and Coconut

Ingredients

  • 1 packet glutinous rice flour
  • 1/2 cup rice flour
  • 2.5 cups pandan water

Filling

  • 1 young coconut, grated
  • Palm sugar to taste
  • Water as needed

Preparation

  1. Mix the glutinous rice flour, rice flour, and pandan water until well combined and set aside.

  2. Shape the dough into small balls and flatten the center to create a dent. Repeat until all dough is used.

  3. Boil 4 cups of water and add the shaped kuih to the boiling water until cooked.

  4. The kuih will float when done; remove and drain the water.

  5. Cook palm sugar with water until thick, then add the grated coconut and cook until dry or to desired moisture.

  6. Finally, mix the kuih with the filling until well combined and serve.
