Steamed Rice Flour Parcel with Coconut Filling

Ingredients

  • 2 cups rice flour
  • 4 cups fresh coconut milk
  • 1 teaspoon salt

Filling

  • 1 coconut (white part only)
  • 1 cup palm sugar
  • 1.5 cups water
  • 0.5 cup white sugar
  • a pinch of salt
  • 2 pandan leaves
  • 1 teaspoon wheat flour

Preparation

  1. Mix coconut milk, rice flour and salt, then cook over heat until thick

  2. For the filling, heat palm sugar, white sugar, pandan leaves and a pinch of salt until melted

  3. Add the coconut to the filling mixture and stir until well combined and the water evaporates

  4. Add wheat flour to the filling and mix well

  5. Prepare the filling a day in advance if possible

  6. Combine the dough and filling together on a banana leaf, wrap it, and steam for 10 to 15 minutes until done

Tips

  1. Make the filling ready a day before preparing the rice flour parcel for best results
