Glutinous Rice with Coconut Filling

Ingredients

  • 4 cups glutinous rice
  • 2 cups coconut milk
  • 1/2 cup water
  • A pinch of salt

Coconut filling

  • 1/3 grated coconut
  • 1 unclear ingredient (possibly cinnamon)
  • 3 tablespoons palm sugar
  • 1 pandan leaf
  • 1 tablespoon white sugar
  • A pinch of salt

Preparation

  1. Steam the glutinous rice for 30 minutes along with the coconut milk and salt.

  2. After steaming, remove and let it cool.

  3. For the coconut filling, add white sugar, the unclear ingredient, palm sugar, salt, and water to a pan. Cook until sugar dissolves.

  4. Add grated coconut and pandan leaf, stir until well combined and fairly dry. Let it cool.

  5. Place the filling on the cooled rice lined with banana leaf and shape into balls.

Tips

  1. Usually prepared at night and can be eaten the next day for best results.
