Glutinous Rice with Coconut Serunding

Ingredients

Glutinous rice

  • 3 cups glutinous rice
  • 2 cups coconut milk
  • Small amount of salt

Serunding

  • 1 grated coconut
  • 10-15 dried chilies
  • 5 stalks lemongrass
  • 2 large onions
  • Small amount of fresh turmeric
  • 1/2 cup dried shrimp
  • 3 tablespoons fennel seeds
  • 1 cup water
  • 1/2 cup granulated sugar
  • Salt to taste

Preparation

Glutinous rice

  1. Steam the glutinous rice for 25 minutes.

  2. Remove and add coconut milk and salt, then stir well.

  3. Steam again for 10-15 minutes.

  4. Remove while still hot. Grease the molds lightly, then put the rice into the molds.

  5. Mix with the serunding.

  6. Ready to serve.

Serunding

  1. Blend all starred ingredients then sauté until fragrant.

  2. Add water and coconut, stir well.

  3. Add salt and sugar.

  4. Cook until dry like serunding.

  5. Cool down.
