Beef Rendang with Yellow Glutinous Rice
Ingredients
- 500g beef
- 3 large onions
- 3 cloves garlic
- 1-inch piece of ginger
- Galangal, size of an adult thumb
- 3 tablespoons ground chili
- 2 tablespoons palm sugar
- 2 tablespoons toasted grated coconut
- Coconut milk from one coconut
- 1 star anise
- 1 cinnamon stick
Yellow glutinous rice components
- 500g glutinous rice
- 1 teaspoon turmeric
- Coconut milk from one grated coconut
- Salt to taste
Preparation
Blend the onions, garlic, ginger, galangal, and chili.
Place the blended mixture in a pot and add star anise and cinnamon stick.
Add the beef and bring to a boil briefly, then add coconut milk, palm sugar, and toasted grated coconut.
Cook on low heat for one hour until the beef is tender.
Once the beef is tender, add sugar and salt to taste.
Glutinous rice
Soak the glutinous rice with turmeric overnight or at least 6 hours, then drain.
Steam the rice for 30 minutes or until cooked.
Cook coconut milk with sugar and salt until it boils, ensuring it does not split.
Pour the coconut milk mixture over the rice and let it absorb.
Once absorbed, steam again for 5 minutes to prevent quick spoilage.
