Northern Malaysian Beef Rice

Ingredients

  • 2 inches ginger
  • 4 cloves garlic
  • 1 tablespoon black pepper
  • 1 kilogram beef
  • 1 soup stock bundle
  • 2 tablespoons soup spices
  • 4 liters water
  • Salt to taste
  • Sliced green onions
  • Fried onions

Beef rice

  • 4 tablespoons butter
  • 1 cinnamon stick
  • 2 star anise
  • 3 cardamom pods
  • 4 pandan leaves
  • 1 large onion, sliced
  • 4 cloves garlic, sliced
  • 2 tablespoons soup spices
  • 1 tomato, roughly chopped
  • 4 cups rice
  • Cooked beef, cubed
  • 5 cups beef broth
  • 1 cup milk
  • 1 tablespoon chicken stock powder or 1 cube
  • 2 cilantro sprigs
  • Handful of raisins
  • Handful of fried onions

Sour sauce

  • 3 large onions, sliced
  • 30 bird's eye chilies, sliced
  • 3 tomatoes, sliced
  • 3 tablespoons tamarind paste
  • 1 cup water
  • 1 tablespoon shrimp paste
  • 2 tablespoons toasted coconut
  • 2 limes
  • 2 tablespoons sugar
  • 1 tablespoon fish sauce or budu

Preparation

  1. Grind the ginger, garlic, and black pepper.

  2. Add the ground mixture and other beef broth ingredients to a pot. Cook until beef is tender. Add more water if necessary.

  3. Strain the broth. Separate the beef and reserve some broth for the rice.

  4. Cube the beef and set aside.

  5. Reheat the remaining broth and season with salt to taste.

  6. Garnish with sliced green onions and fried onions.

  7. Melt butter in a pot.

  8. Add cinnamon stick, star anise, cardamom, pandan leaves, sliced onion, and sliced garlic. Sauté briefly.

  9. Add soup spices and tomato. Stir well.

  10. Add rice, cubed cooked beef, beef broth, milk, and chicken stock. Stir evenly.

  11. Cover the pot and cook on low heat until done, about 20-30 minutes.

  12. When rice is three-quarters cooked, add cilantro, raisins, and fried onions.

  13. Slice the onions, chilies, and tomatoes.

  14. Mix tamarind paste with water.

  15. Add all sour sauce ingredients and season with sugar and fish sauce. Can be eaten raw or heated briefly.

Tips

  1. Beef can also be boiled using a pressure cooker.

  2. Optionally add beef fat when sautéing.

  3. Soup spices can be substituted or supplemented with curry powder.

  4. The rice can be cooked in a rice cooker as usual.

  5. The sour sauce can be prepared and served without heating if preferred.
