Young Jackfruit in Coconut Milk

Ingredients

  • 300 g young jackfruit
  • 1/2 coconut
  • 500 ml water (for coconut milk)
  • 3 bay leaves
  • 2 slices galangal
  • 25 g palm sugar
  • 1 packet chicken stock powder
  • 6 green cabbage leaves

Ground spices

  • 4 cloves garlic
  • 6 shallots
  • 3 candlenuts
  • 1/2 teaspoon salt

Preparation

  1. Boil 500 ml water and add the young jackfruit. Bring to a boil again.

  2. Once slightly soft, add all the ground spices, bay leaves, galangal, palm sugar, and chicken stock powder.

  3. Cover and boil until the spices are absorbed.

  4. Pour in the coconut milk and cook briefly until it boils.

  5. Finally, add the green cabbage and cook briefly. Adjust the seasoning.

  6. Remove from heat and serve.

Notes

  1. Serves 4-6 people. This dish is savory and slightly sweet, traditionally served with fried chicken or salted fish and chili sauce.
