Steamed Pandan Layer Cake
Ingredients
Bottom layer
- 1.5 cups all-purpose flour
- 0.5 cups tapioca flour
- 1 cup sugar
- 8-10 pandan leaves
- 3 cups water
- 1 small box coconut milk
- a pinch of salt
Top layer
- 1.5 cups all-purpose flour
- 0.5 cups tapioca flour
- 1 small box coconut milk
- 3 cups water
- a pinch of salt
Preparation
Blend the pandan leaves with 3 cups of water and strain the mixture.
Mix the strained pandan mixture with the bottom layer ingredients, stir well, and strain into another container.
For the top layer, combine all ingredients, mix well, and strain.
Grease a large mold with a little oil.
Pour a large spoonful or less of the bottom layer mixture into the mold and steam for 10 minutes on medium heat.
When the bottom layer is cooked, pour a large spoonful or less of the top layer mixture over it.
Steam for an additional 15-20 minutes.
Remove from heat and allow to cool before removing from the mold.
Tips
You can choose to pour the white or green layer first as preferred.
Alternatively, use a 10x10 inch pan lined with plastic and steam each layer for 20 minutes.
