Thai Mango Sticky Rice

Ingredients

  • 200g glutinous rice
  • 500ml coconut milk
  • 2 pandan leaves
  • 1 tablespoon sugar
  • 3/4 teaspoon salt
  • 500ml coconut milk
  • 5 tablespoons sugar
  • a pinch of salt
  • 5 teaspoons cornstarch
  • optional pandan paste
  • mango
  • roasted sesame seeds

Preparation

  1. Soak the glutinous rice in water for 3 hours

  2. Drain the rice, then mix with 500ml coconut milk, pandan leaves, 1 tablespoon sugar, and 3/4 teaspoon salt

  3. Cook the mixture in a rice cooker until done

  4. For the coconut sauce, mix 500ml coconut milk, 5 tablespoons sugar, a pinch of salt, 5 teaspoons cornstarch, and optional pandan paste, then cook until thickened and set aside

  5. Serve the sticky rice with the coconut sauce, sliced mango, and sprinkle with roasted sesame seeds

Tips

  1. Use a rice cooker for a simple and practical method to cook the sticky rice

  2. Optionally color part of the sticky rice with butterfly pea flower for a more visually appealing dish
