Thai Mango Sticky Rice
Ingredients
- 200g glutinous rice
- 500ml coconut milk
- 2 pandan leaves
- 1 tablespoon sugar
- 3/4 teaspoon salt
- 500ml coconut milk
- 5 tablespoons sugar
- a pinch of salt
- 5 teaspoons cornstarch
- optional pandan paste
- mango
- roasted sesame seeds
Preparation
Soak the glutinous rice in water for 3 hours
Drain the rice, then mix with 500ml coconut milk, pandan leaves, 1 tablespoon sugar, and 3/4 teaspoon salt
Cook the mixture in a rice cooker until done
For the coconut sauce, mix 500ml coconut milk, 5 tablespoons sugar, a pinch of salt, 5 teaspoons cornstarch, and optional pandan paste, then cook until thickened and set aside
Serve the sticky rice with the coconut sauce, sliced mango, and sprinkle with roasted sesame seeds

Use a rice cooker for a simple and practical method to cook the sticky rice
Optionally color part of the sticky rice with butterfly pea flower for a more visually appealing dish
