Easy Baked S’mores Marshmallow Cookies

Ingredients

  • 5 oz graham crackers (1 sleeve)
  • 1 3/4 cups all-purpose flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 3/4 cup unsalted butter, very soft
  • 3/4 cup brown sugar
  • 3/4 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla
  • 2 cups chopped chocolate or chips
  • ~2 cups mini marshmallows

Preparation

  1. Crush graham crackers into fine crumbs

  2. Whisk crumbs with flour, salt, and baking soda

  3. Beat butter and both sugars until smooth

  4. Add eggs and vanilla, beat until blended

  5. Mix in dry ingredients

  6. Stir in chocolate and chill dough for 30 minutes or freeze scoops

  7. Scoop onto lined baking sheets and bake at 375°F for 10 minutes

  8. Add marshmallows to tops and bake for 2 to 3 more minutes

  9. Cool for 5 minutes on sheet, then transfer to rack
