Grain-Free Vegan Pumpkin Pie

Ingredients

Crust

  • 3 cups of nuts of choice (we use 2 cups of @crazywalnuts pumpkin spice walnuts mixed with 1 cup of @crazywalnuts sea salt walnuts)
  • 3 tbsp walnut butter (we use @crazywalnuts)

Filling

  • 15 oz pureed pumpkin
  • 1 tsp Ceylon cinnamon
  • 1 tsp nutmeg
  • 1/4 tsp ground ginger
  • 1/2 tsp ground clove
  • 1/2 tsp sea salt
  • 1/2 cup of sweetener of choice (maple syrup or agave)
  • 4 1/2 tsp egg replacer mixed with 6 tbsp of warm water until smooth (we use @bobsredmill)

Preparation

  1. Mix crust ingredients and press into pie dish. Freeze for 30 minutes or more.

  2. Mix filling ingredients and place on top of crust and bake in oven for 30 minutes at 350°F.

  3. Remove from oven, let cool, and serve.
