Homemade Vegan Pumpkin Pie

Ingredients

  • 2 cups pumpkin purée
  • 1 cup coconut cream (from a can)
  • 1/4 cup maple syrup
  • 1/2 cup sugar
  • 1/4 cup cornstarch
  • 2 teaspoons vanilla
  • 2 teaspoons allspice
  • 2 teaspoons cinnamon
  • 1 teaspoon ginger
  • 1 teaspoon nutmeg
  • 1/2 teaspoon salt
  • frozen pie crust

Preparation

  1. Add all of the ingredients to a large bowl.

  2. Mix everything well with a hand mixer.

  3. Transfer the mixture to your pie crust.

  4. Bake for 50-60 minutes at 350°F.

  5. Leave it plenty of time to cool.
