Homemade Vegan Pumpkin Pie
Ingredients
- 2 cups pumpkin purée
- 1 cup coconut cream (from a can)
- 1/4 cup maple syrup
- 1/2 cup sugar
- 1/4 cup cornstarch
- 2 teaspoons vanilla
- 2 teaspoons allspice
- 2 teaspoons cinnamon
- 1 teaspoon ginger
- 1 teaspoon nutmeg
- 1/2 teaspoon salt
- frozen pie crust
Preparation
Add all of the ingredients to a large bowl.
Mix everything well with a hand mixer.
Transfer the mixture to your pie crust.
Bake for 50-60 minutes at 350°F.
Leave it plenty of time to cool.
