Linzer Cookies with Cranberry Orange Chia Jam

Ingredients

Cookies

  • 3/4 cup vegan margarine
  • 1/2 cup caster sugar
  • 1 orange, zest only
  • 1 tsp vanilla extract
  • 1.5 cup plain flour
  • 3/4 cup ground almonds
  • pinch sea salt
  • 3 tbsp icing sugar

Cranberry orange chia jam

  • 300g Cooks’ Ingredients Cranberries
  • 1/2 cup water
  • 2 oranges
  • 1 tbsp chia seeds
  • 2 cinnamon sticks or 1/2 tsp cinnamon
  • 1 tbsp sugar

Preparation

  1. Make chia jam by adding cranberries and water to a small pan over a medium heat, then zest and juice oranges and add to the pan with chia seeds, cinnamon sticks, and sugar. Simmer for 15-20 minutes until thick and jammy.

  2. Prepare cookie dough by beating butter, sugar, orange zest, and vanilla until light and fluffy.

  3. In a large bowl, whisk together flour, ground almonds, and salt. Add the butter mixture and mix until combined to form a dough.

  4. Divide the dough in half, pat each half into a disc, wrap, and chill for an hour in the fridge.

  5. Preheat oven to 180°C and line two baking sheets.

  6. On a floured surface, roll one disc of dough out to 5 mm thick. Using a cutter, cut out cookies and transfer to a baking sheet. Repeat with the other disc, cutting out heart shapes as well.

  7. Bake for 10 minutes and allow to cool fully on a rack.

  8. Fill the cookies with 1/2 teaspoon of jam each and sprinkle with sifted icing sugar.
