Vegan Linzer Cookies with Cranberry Orange Filling
Ingredients
Cookies
- 3/4 cup vegan margarine
- 1/2 cup caster sugar
- 1 orange, zest only
- 1 tsp vanilla extract
- 1.5 cup plain flour
- 3/4 cup ground almonds
- pinch sea salt
- 3 tbsp icing sugar
Cranberry orange chia jam
- 300g Cooks’ Ingredients Cranberries
- 1/2 cup water
- 2 oranges
- 1 tbsp chia seeds
- 2 cinnamon sticks or 1/2 tsp cinnamon
- 1 tbsp sugar
Preparation
Add cranberries and water to a small pan over medium heat.
Zest and juice oranges and add to the pan with chia seeds, cinnamon sticks, and sugar.
Simmer for 15-20 minutes until thick and jammy.
Beat butter, sugar, orange zest, and vanilla until light and fluffy.
In a large bowl, whisk together flour, ground almonds, and salt.
Add the butter mixture and mix until combined to form a dough.
Divide dough in half, patting each half into a disc.
Wrap and chill for an hour in the fridge.
Preheat oven to 180°C and line two baking sheets.
On a floured surface, roll one disc of dough out to 5 mm thick.
Using a cutter, cut out cookies and transfer to baking sheet.
Make the same amount of cookies using the other disc of dough and cut out heart shapes.
Transfer to baking sheet and bake for 10 minutes.
Allow cookies to cool fully on a rack.
Fill cookies with 1/2 tsp jam each and sprinkle with sifted icing sugar.
