Linzer Cookies with Cranberry Orange Chia Jam

Ingredients

  • 3/4 cup vegan margarine
  • 1/2 cup caster sugar
  • 1 orange, zest only
  • 1 tsp vanilla extract
  • 1.5 cup plain flour
  • 3/4 cup ground almonds
  • pinch sea salt
  • 3 tbsp icing sugar

Cranberry orange chia jam

  • 300g Cooks’ Ingredients Cranberries
  • 1/2 cup water
  • 2 oranges
  • 1 tbsp chia seeds
  • 2 cinnamon sticks or 1/2 tsp cinnamon
  • 1 tbsp sugar

Preparation

  1. Add cranberries and water to a small pan over medium heat.

  2. Zest and juice the oranges and add to the pan with chia seeds, cinnamon sticks or ground cinnamon, and sugar.

  3. Simmer for 15-20 minutes until thick and jammy to make the chia jam.

  4. Beat the butter, sugar, orange zest, and vanilla extract until light and fluffy.

  5. In a large bowl, whisk together flour, ground almonds, and salt.

  6. Add the butter mixture to the dry ingredients and mix until combined to form a dough.

  7. Divide the dough in half, pat each half into a disc, wrap, and chill in the fridge for one hour.

  8. Preheat the oven to 180°C and line two baking sheets with parchment paper.

  9. On a floured surface, roll out one disc of dough to 5 mm thick and cut out cookies using a cutter, then transfer to a baking sheet.

  10. Repeat with the second disc of dough, cutting out the same number of cookies and adding heart shapes to some.

  11. Bake for 10 minutes and allow to cool fully on a wire rack.

  12. Fill the cookies with 1/2 teaspoon of jam each and sprinkle with sifted icing sugar.

Notes

  1. This recipe is ideal for holiday baking, such as during Christmas.
