Festive Vegan Linzer Biscuits
Ingredients
- 3/4 cup vegan butter, cubed
- 1/2 cup caster sugar
- 1 tsp ground cinnamon
- 1 tsp vanilla extract
- 2 tsp apple cider vinegar
- 1 cup plain flour
- 3/4 cup almond meal
- 1/2 tsp baking powder
- 1/4 tsp fine salt
Preparation
Line two baking trays and set aside.
Add butter, sugar, and cinnamon to a mixing bowl and beat with electric mixers for 3 minutes, or until fluffy.
Add vanilla and apple cider vinegar and beat for another minute.
Sift in the flours and add the remaining ingredients. Gently fold together, then divide the dough into two even balls. Cover with plastic wrap and refrigerate for 1 hour.
After 1 hour, roll out the dough on a lightly floured board to about 1 cm thick. Use cookie cutters to cut desired shapes and place them on the baking tray. Then, place the tray of cookies in the freezer for 1 to 2 hours.
Preheat the oven to 180 degrees Celsius. Bake the cookies for approximately 7 to 8 minutes, or until just slightly colored. Allow them to cool for 5 minutes before transferring to a cooling rack.
Allow the cookies to cool completely, then sandwich them together with your preferred jam. Enjoy.
