Single-Serving Double Chocolate Protein Cookie
Ingredients
- 1 tbsp brown sugar
- 1 tbsp creamy peanut butter or almond
- 1 tbsp vegan butter, melted
- 1/4 tsp vanilla extract
- 2 tbsp + 1 tsp all-purpose flour
- 1 tbsp chocolate protein powder (I used @vitalproteins collagen protein powder)
- 1/2 tsp cocoa powder
- 1/2 tsp instant espresso powder
- 1/8 tsp baking powder
- Pinch of flaky sea salt
- 2 tbsp dark chocolate chunks or chips
Preparation
Preheat the oven to 350°F. Line a baking sheet with parchment paper.
In a bowl, whisk together melted vegan butter, peanut butter, brown sugar, and vanilla. Stir in flour, protein powder, cocoa powder, espresso powder, baking powder, and salt until a soft dough forms. Fold in chocolate chunks.
Form into one cookie on the prepared baking sheet. Bake for 12 min for gooey cookie and 14-15 for more well done (but still chewy & moist!). Finish with flaky sea salt. Allow cooling for 3 min before enjoying.
