Avocado Matcha Protein Brownies
Ingredients
- 1 ripe mashed avocado
- 1 ripe mashed banana
- 200 g maple or agave syrup
- 130 g almond butter
- 60 g cocoa powder
- 1 tablespoon chocolate protein powder
- 2 teaspoons vanilla extract
- 1 teaspoon baking powder
- 1-2 handfuls chocolate chunks (optional)
Matcha topping
- 200 g soy cream
- 4-5 tablespoons maple or agave syrup
- 3-4 teaspoons matcha powder
Preparation
Preheat the oven to 180°C.
Mix all the ingredients together in a large bowl.
Transfer the mixture to a baking pan lined with parchment paper.
Bake for 40 minutes.
Let the brownie cool down.
Whip the soy cream until fluffy.
Add 4-5 tablespoons of maple or agave syrup and 3-4 teaspoons of matcha powder to the whipped cream.
Spread the topping over the cooled brownie.
Sprinkle with additional matcha powder.
