Avocado Matcha Protein Brownies

Ingredients

  • 1 ripe mashed avocado
  • 1 ripe mashed banana
  • 200 g maple or agave syrup
  • 130 g almond butter
  • 60 g cocoa powder
  • 1 tablespoon chocolate protein powder
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking powder
  • 1-2 handfuls chocolate chunks (optional)

Matcha topping

  • 200 g soy cream
  • 4-5 tablespoons maple or agave syrup
  • 3-4 teaspoons matcha powder

Preparation

  1. Preheat the oven to 180°C.

  2. Mix all the ingredients together in a large bowl.

  3. Transfer the mixture to a baking pan lined with parchment paper.

  4. Bake for 40 minutes.

  5. Let the brownie cool down.

  6. Whip the soy cream until fluffy.

  7. Add 4-5 tablespoons of maple or agave syrup and 3-4 teaspoons of matcha powder to the whipped cream.

  8. Spread the topping over the cooled brownie.

  9. Sprinkle with additional matcha powder.
