Dark Chocolate Pistachio Apricot Cookies

Ingredients

  • 110g vegan butter
  • 150g light brown sugar
  • 60g caster sugar
  • 1 tbsp plantmilk
  • 200g plain flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cardamom
  • 70g good quality dark chocolate
  • 70g dried soft apricots
  • 50g pistachios, shelled

Preparation

  1. Preheat the oven to 190C.

  2. In a large bowl whisk together the sugar and butter until light and fluffy.

  3. Add the milk and vanilla and mix well.

  4. Using a wooden spoon mix in the flour, cardamom, baking powder and soda.

  5. Roughly chop the chocolate into big chunks, cut the apricots in small pieces and roughly chop the pistachios and fold this in too.

  6. Pop the mixture in the fridge for 30 minutes to firm up.

  7. Scoop a tablespoon of dough out and roll into a ball, place on parchment paper lined baking tray.

  8. Continue to do this keeping the cookies at least 7cm apart.

  9. Bake in the oven for 10-12 minutes until golden around the edges and then leave to cool for 10 minutes to firm up a little

Notes

  1. These were dark chocolate, pistachio and apricot cookies, they were soft and chewy in the middle and crisp on the edge and lightly fragranced with cardamom.

  2. They were SO good! Kind of different but I was so into it.
