Puffy Glazed Lemon Cookies

Ingredients

  • 1/3 cup coconut butter
  • 1/3 cup agave (or honey or maple syrup)
  • 1/2 cup cassava flour
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 2 tbsp lemon juice
  • 1 tbsp lemon zest
  • 1/8 tsp salt

Glaze

  • 1/2 cup powdered sugar + 1-2 tbsp lemon juice

Preparation

  1. Preheat the oven to 350 degrees Fahrenheit.

  2. Melt the coconut butter and agave together.

  3. Whisk in the lemon juice.

  4. Add the cassava flour, baking soda, baking powder, lemon zest, and salt; stir to combine.

  5. Scoop about 2 tablespoons of dough and roll into a ball.

  6. Arrange on a baking sheet and press slightly to flatten.

  7. Bake for 8-10 minutes at 350 degrees Fahrenheit until golden brown.

  8. Allow the cookies to cool before glazing.

  9. Prepare the glaze by mixing the powdered sugar and lemon juice.

  10. Glaze the cookies and enjoy warm or as desired.
