Vegan Oat Cookies with Strawberries

Ingredients

  • 150g plant-based butter
  • 150g granulated sugar
  • 150g brown sugar
  • 80g zucchini, grated and squeezed
  • 1/2 tsp vanilla powder
  • 1.5 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 1 tsp lemon juice
  • 150g flour
  • 200g oats
  • 16g freeze-dried strawberries

Preparation

  1. Mix all ingredients to form a dough

  2. Let the dough rest in the refrigerator for at least 30 minutes, preferably longer such as an hour or overnight, or even in the freezer

  3. Form balls from the dough

  4. Optionally coat the balls if you plan to bake them later

  5. Press the balls slightly flatter onto a baking sheet lined with parchment paper

  6. Bake for 12 minutes at 190°C

Tips

  1. Ensure the strawberries are minimally exposed on top to prevent burning

  2. Consider adding a bit of lemon zest for enhanced flavor
