Oatmeal Cookies with Cinnamon and Chocolate Chips
Ingredients
- 1 cup unsalted butter
- 1 cup brown sugar
- 1 egg
- 1 teaspoon vanilla powder
- 60 grams all-purpose flour
- 1/2 teaspoon cinnamon powder
- 1 teaspoon baking soda
- 3 cups oatmeal
- 1/2 cup chocolate chips
- Salt
Preparation
Mix and sift the flour, cinnamon, baking soda, and salt and set aside.
Beat the butter, sugar, egg, and vanilla until smooth, then add the flour mixture and stir until combined.
Once combined, add the oatmeal and chocolate chips, stir again, and refrigerate for at least 30 minutes covered with plastic wrap.
After chilling, remove the dough from the fridge, form it into balls, and place on a baking sheet greased with butter and a little flour to prevent sticking, then flatten with a fork and leave space between them as the cookies will spread.
Preheat the oven to 200°C for 10 minutes, then bake at 190°C for 20 minutes.
Let cool briefly before transferring to a container.
Tips
These cookies pair well with coffee or tea.
You can add more cinnamon for a stronger flavor or substitute chocolate chips with raisins.
