Oat and Berry Crumble Breakfast Bars

Ingredients

  • 2 cups of oats
  • 4 tbsp of seeds (1 tbsp chia seeds, 1 tbsp hemp seeds, 1 tbsp sunflower seeds, 1 tbsp pumpkin seeds)
  • 1/2 tsp cinnamon
  • 1/3 cup + 2 tbsp peanut butter (runny)
  • 1/3 cup soy or nut milk
  • 1/4 cup maple syrup
  • 1 cup of frozen raspberries or blueberries
  • 1/2 cup dairy-free chocolate chips (optional)

Preparation

  1. Pre-heat your oven to 180 degrees Celsius

  2. Line a small square tin or loaf with baking paper.

  3. Mix in a bowl the oats, cinnamon, seeds, peanut butter, soy milk and maple syrup until sticky and well combined.

  4. Press down 3/4 of the mix in your tin. Keep 1/4 on the side to add on top as a crumble.

  5. Add the frozen berries on top, the chocolate chips and the extra crumble mixture and extra seeds and place in the oven to bake for 25 minutes.

  6. Leave to cool down before serving
