Roast Beef with Potato Puree

Ingredients

  • 2 kg beef roast
  • 6 cloves garlic
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1/2 teaspoon cumin
  • 3 bay leaves
  • 4 cardamom pods
  • 2 teaspoons ground mastic
  • 2 chopped onions
  • 6 chopped garlic cloves
  • 1 bell pepper
  • 1 large carrot, thick slices
  • 2 medium potatoes, cut into thick fingers
  • 1/4 cup corn oil
  • 1 cup water

Garnish

  • chopped parsley
  • paprika

Preparation

  1. Set the oven rack in the middle and preheat the oven to 180°C. Prepare a 13x9 inch baking dish and cotton string.

  2. Using a sharp knife, make deep holes in the meat and insert garlic cloves into them.

  3. In a small bowl, combine salt, black pepper, and cumin and mix well. Rub the spice mixture over the meat thoroughly.

  4. Tie the string around the meat to hold its shape during roasting.

  5. Place the meat in the baking dish. Add bay leaves, cardamom, ground mastic, chopped onions, chopped garlic, bell pepper, carrot slices, potato fingers, corn oil, and water. Cover the dish with aluminum foil.

  6. Bake in the oven for 3 hours or until the meat is cooked.

  7. Remove the string using a sharp knife and transfer the roast and vegetables to a serving platter.

  8. Mash the cooked potatoes to make a smooth puree. Place the puree in a piping bag and decorate the roast with it. Sprinkle with chopped parsley and paprika.
