Baked Kofta with Potatoes and Vegetables

Ingredients

  • 6 large potatoes
  • 5 large tomatoes
  • 1 large onion
  • 1 tablespoon mixed spices
  • 1 tablespoon cinnamon
  • 1 tablespoon turmeric
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon marjoram
  • 1/2 cup olive oil

Kofta

  • 500 grams ground meat
  • 1 large chopped onion
  • 3 cloves crushed garlic
  • 1 cup chopped parsley
  • 1 cup water or tomato juice

Preparation

  1. Preheat the oven to 180 degrees Celsius

  2. Prepare a medium-sized baking tray or dish

  3. Peel the potatoes and cut them into 4 mm thick slices

  4. Cut the tomatoes into 3 mm thick slices

  5. Cut the onion into 3 mm thick slices

  6. Place all the spices in a bowl

  7. Sprinkle some spices over the potatoes

  8. Arrange the potato slices in layers at the bottom and sides of the tray

  9. Place some onion slices on top of the potatoes

  10. Sprinkle some spices

  11. Mix the kofta ingredients together and form into patties or balls

  12. Add the kofta to the tray with the vegetables

  13. Layer the tomato slices over the mixture

  14. Pour in the water or tomato juice

  15. Bake in the preheated oven until fully cooked
