Baked Potatoes Stuffed with Spiced Meat
Ingredients
- 12 small potatoes
- 3 tablespoons corn oil
- 300 grams ground meat
- 1 small onion
- 2 cloves garlic
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cinnamon
- 1/4 teaspoon mixed spices
- 1 small green bell pepper
- 1 small red bell pepper
- 1 medium tomato
- 2 cups chicken broth
Preparation
Set the middle rack in the oven and preheat the oven to 180 degrees Celsius.
Prepare a medium-sized, high-edged baking dish.
Using a vegetable peeler, peel the potatoes. Cut a thin slice from one end to help them stand in the dish and cut about 1 inch off the other end.
Using a vegetable corer, hollow out the potatoes and place the shells in the dish.
In a medium-sized pot, heat the oil over medium heat, add the ground meat, and stir until it is fully cooked. Add the potato pulp, onion, garlic, salt, pepper, cinnamon, mixed spices, bell peppers, and tomato, then stir until the vegetables soften.
Distribute the mixture into the potato shells, pour the chicken broth over them, and cover the dish with aluminum foil.
Place the dish in the oven and bake for 40 minutes or until the potatoes are cooked.
