Baked Chicken with Spiced Vegetables

Ingredients

  • 1.5 kg chicken
  • 2 large grated onions
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon cinnamon
  • 1 teaspoon mixed spices
  • 3 cups peas
  • 3 large sliced carrots
  • 3 large sliced potatoes
  • 2 green bell peppers
  • 3 tablespoons ghee
  • Chicken broth (amount not specified)

Preparation

  1. Cut the chicken into halves and prepare a baking dish or tray, then set it aside

  2. In a bowl, place the onion, add the spices, cinnamon, salt, and black pepper, then mix well

  3. In the baking dish, place the carrots, peas, potatoes, and green pepper

  4. Spread half of the onion mixture on the chicken and between the skin and meat, then place the chicken on the vegetables in the dish

  5. Add chicken broth to the remaining onion mixture and spread it over the vegetables and chicken, then spread the ghee on the surface of the chicken

  6. Cover the dish with aluminum foil and bake in the oven at 180°C for one hour until the chicken is cooked
