Baked Ribs with Mixed Vegetables

Ingredients

  • 1 kg rib meat
  • 2 medium potatoes, cubed
  • 3 medium zucchini, cubed
  • 3 medium carrots, cubed
  • 2 medium onions, cubed
  • 1 cup mushrooms, sliced
  • 2 medium tomatoes, cubed
  • 1 cup peas
  • 1 cup okra
  • 1 cup green beans
  • 1 tablespoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon mixed spices
  • 2 tablespoons tomato paste
  • 2 tablespoons lemon juice
  • 3 tablespoons oil
  • 2 cups water or broth

Preparation

  1. Preheat the oven to 180°C and prepare a wide oven dish

  2. In a wide pan, heat the oil, add the rib meat, brown it, and place it in the oven dish

  3. Add the vegetables and spices, mix well, then in a deep bowl, mix the broth or water with tomato paste and lemon juice, and pour it over the vegetables

  4. Cover the dish and bake for about 45 minutes, then remove the cover and bake for another 15 minutes to brown
