Simple Healthy Zucchini Quiche

Ingredients

  • 2 zucchinis, thinly sliced
  • 1 large onion, thinly sliced
  • 1 cup parmesan cheese
  • 6 large eggs
  • 1/2 cup almond flour
  • 1/4 cup chopped basil
  • 3 tablespoons olive oil
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • black pepper to taste
  • coconut oil spray, for greasing

Preparation

  1. Preheat the oven to 180Β°C.

  2. Grease a tray with 24 individual molds or a large baking dish, and prepare to bake in batches if necessary.

  3. In a large bowl, mix all the ingredients.

  4. Spoon approximately 1 tablespoon of the mixture into each individual mold.

  5. Bake for 15 minutes or until golden and cooked through.

  6. Remove from the oven and let cool before unmolding.
