Simple Healthy Zucchini Quiche
Ingredients
- 2 zucchinis, thinly sliced
- 1 large onion, thinly sliced
- 1 cup parmesan cheese
- 6 large eggs
- 1/2 cup almond flour
- 1/4 cup chopped basil
- 3 tablespoons olive oil
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- black pepper to taste
- coconut oil spray, for greasing
Preparation
Preheat the oven to 180Β°C.
Grease a tray with 24 individual molds or a large baking dish, and prepare to bake in batches if necessary.
In a large bowl, mix all the ingredients.
Spoon approximately 1 tablespoon of the mixture into each individual mold.
Bake for 15 minutes or until golden and cooked through.
Remove from the oven and let cool before unmolding.
