Healthy Gluten-Free Lemon Loaf Cake
Ingredients
- 2 1/4 cup almond flour
- 1 1/4 tsp baking powder
- 1/2 tsp salt
- 1/3 cup olive oil (organic, extra virgin)
- 1/2 cup maple syrup (organic)
- zest of 1 lemon
- 2 eggs (organic, room temperature)
- 1 tbsp lemon juice (fresh)
- 1 tsp vanilla extract (organic)
Frosting
- lemon juice
- confectioners style monk fruit
- vanilla extract
Preparation
Preheat your oven to 325°F.
Grease a standard sized loaf pan with olive oil spray and line with parchment paper.
In a mixing bowl, whisk the almond flour, baking powder, salt, and lemon zest.
Add the olive oil, maple syrup, eggs, lemon juice, and vanilla.
Mix until just combined. Do not over mix.
Pour into your loaf pan.
Bake for 40-45 minutes, or until cake has reached an internal temperature of 190°F.
Frosting
Mix lemon juice, confectioners style monk fruit, and vanilla extract to achieve desired taste and consistency.
Spread the frosting over the cooled cake.
