Healthy Copycat Starbucks Coffee Cake
Ingredients
Crumble
- 1/3 cup coconut sugar
- 2/3 cup almond flour
- 1 1/2 tsp ground cinnamon
- 1/4 tsp salt
- 3 tbsp avocado oil
Cake
- 2 cups almond flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp fine grain sea salt
- 4 eggs
- 2/3 cup maple syrup
- 1.5 tsp vanilla extract
- 1/2 cup greek yogurt (can sub 1/4 cup olive oil if dairy free)
Preparation
Preheat oven to 350°F and grease a 9x9 inch baking pan.
Mix the crumble ingredients together in a bowl until crumbly and set aside.
In a large bowl, whisk together the almond flour, baking powder, baking soda, and salt.
In another bowl, whisk together the eggs, maple syrup, vanilla extract, and Greek yogurt.
Combine the wet and dry ingredients until just mixed, being careful not to overmix.
Pour half of the batter into the prepared pan, sprinkle with half of the crumble mixture, then add the remaining batter and top with the remaining crumble.
Bake for 30-40 minutes or until a toothpick inserted in the center comes out clean.
Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
