Smoky Cauliflower Tacos with Toppings

Ingredients

  • 1 head cauliflower
  • olive oil
  • soft corn tortillas
  • tomato salsa
  • avocado
  • red cabbage
  • coriander
  • sweetcorn
  • lime juice

Spices

  • 1 tsp ground cumin
  • 1 tsp sweet smoked paprika
  • 1 tsp chili powder
  • salt and pepper

Preparation

  1. Preheat the oven to 200°C

  2. Put the spices, salt and pepper into a large bowl and give it a stir

  3. Add the cauliflower and mix to coat each piece in the spices

  4. Spread the cauliflower onto a large baking tray and drizzle with olive oil

  5. Bake for 20 minutes until the edges start to brown

  6. Warm the tortillas in a dry frying pan

  7. Fill the tortillas with all the toppings
