Smoky Cauliflower Tacos with Toppings

Ingredients

  • one head of cauliflower
  • 1 tsp ground cumin
  • 1 tsp sweet smoked paprika
  • 1 tsp chilli powder
  • salt and pepper
  • olive oil
  • soft corn tortillas

Toppings

  • tomato salsa
  • avocado
  • red cabbage
  • coriander
  • sweetcorn
  • lime juice

Preparation

  1. Preheat the oven to 200°C.

  2. Put the spices, salt, and pepper into a large bowl and stir.

  3. Add the cauliflower and mix to coat each piece in the spices.

  4. Spread the cauliflower onto a large baking tray and drizzle with olive oil.

  5. Bake for 20 minutes until the edges start to brown.

  6. Warm the tortillas in a dry frying pan.

  7. Fill the tortillas with all the toppings.
