Sweetcorn Fritters with Guacamole Brunch
Ingredients
Fritters
- 1 tin of Sweetcorn (340g)
- Handful of coriander
- 1 spring onion
- 6 tbsp gram flour
- Salt and pepper
- 20ml water
- 1 tsp sweet smoked paprika
- Half the juice of one lime
- 2 tbsp Olive oil
Guacamole
- 1 avocado
- Half the juice of one lime
- Chilli flakes
- Salt and pepper
Preparation
Put half the sweetcorn and the rest of the fritter ingredients into a food processor and pulse until combined.
Add the remaining sweetcorn and mix.
Heat olive oil in a frying pan over medium heat.
Add a tablespoon of the mixture and fry the fritters in batches until brown, flipping after a few minutes.
Make guacamole by placing all guac ingredients in a small bowl and mash with a fork.
