Sweetcorn Fritters with Guacamole Brunch

Ingredients

Fritters

  • 1 tin of Sweetcorn (340g)
  • Handful of coriander
  • 1 spring onion
  • 6 tbsp gram flour
  • Salt and pepper
  • 20ml water
  • 1 tsp sweet smoked paprika
  • Half the juice of one lime
  • 2 tbsp Olive oil

Guacamole

  • 1 avocado
  • Half the juice of one lime
  • Chilli flakes
  • Salt and pepper

Preparation

  1. Put half the sweetcorn and the rest of the fritter ingredients into a food processor and pulse until combined.

  2. Add the remaining sweetcorn and mix.

  3. Heat olive oil in a frying pan over medium heat.

  4. Add a tablespoon of the mixture and fry the fritters in batches until brown, flipping after a few minutes.

  5. Make guacamole by placing all guac ingredients in a small bowl and mash with a fork.
