Vegan Cabbage and Carrot Fritters

Ingredients

  • 2 tablespoons flaxseeds
  • 7 tablespoons water
  • 500g cabbage
  • 200g carrots
  • 2 tablespoons flour
  • 1 teaspoon baking powder
  • 1 teaspoon turmeric
  • Salt and pepper
  • Oil for frying

Preparation

  1. In a small bowl mix the flax seeds with water and leave to thicken while preparing the vegetables.

  2. Wash the cabbage and peel the carrots, then shred both into small pieces.

  3. Mix the shredded cabbage and carrots in a bowl along with flour, baking powder, turmeric, and a generous pinch of salt and pepper, then add the flax seed mixture and combine all ingredients; the mixture will be a little wet and sticky.

  4. Form the mixture into fritter shapes or the desired shapes.

  5. Heat a pan with 3-4 tablespoons of oil, carefully add the fritters, cook for 5 minutes until crispy and golden, flipping halfway through, and once cooked, place on a plate with paper towels to drain the oil.
