Vegan Zucchini Crisps with Dipping Sauce

Ingredients

  • 2 small zucchinis
  • 1 cup of flour
  • Pinch of salt
  • 1/2 cup of vegetable broth
  • 1/3 cup of water
  • 1 cup bread crumbs
  • 1/3 cup of nutritional yeast or parmesan
  • 1 tsp paprika
  • Oil for frying

Sauce

  • 1/2 cup unsweetened soy yogurt
  • 2 tbsp lemon juice
  • 1 tbsp coriander

Preparation

  1. Slice zucchinis into 1cm thick slices.

  2. Mix together flour, salt, vegetable broth, and water.

  3. In another bowl, mix bread crumbs with nutritional yeast and paprika.

  4. Season the zucchini slices with salt and pepper, then dip them into the flour mixture followed by the bread crumb mixture, and fry for 3 minutes on each side.

  5. For the dipping sauce, mix together soy yogurt, lemon juice, and coriander.
