Vegan Glazed Orange Cauliflower

Ingredients

  • 2 small heads of cauliflower (makes around 3 cups of florets), raw
  • Oil for frying
  • 2 tbsp cornstarch + 4 tbsp water
  • Extra orange slices
  • Sesame seeds

Batter

  • 1/2 cup flour
  • 1 tbsp corn starch
  • 1 tsp baking powder
  • 1 tsp salt
  • 3/4 cup water

Breading

  • 1 1/2 cup bread crumbs
  • 1/2 cup desiccated coconut (or sub more bread crumbs)

Glaze

  • 1 cup orange juice from 2 navel oranges (or orange juice of choice)
  • 1 tsp orange zest
  • 1/4 cup maple syrup
  • 3 tbsp soy sauce
  • 2 tbsp rice wine vinegar or white vinegar
  • 2 tbsp water

Preparation

  1. Cut cauliflower into florets

  2. Mix batter ingredients together to form a smooth batter

  3. Dip cauliflower florets in batter, then coat in breading mixture

  4. Fry battered and breaded cauliflower in oil until golden and crispy

  5. Combine glaze ingredients in a saucepan, add cornstarch mixture, and cook until thickened

  6. Toss fried cauliflower in the glaze to coat evenly

  7. Garnish with sesame seeds and extra orange slices before serving
