Crispy Jackfruit Fritters with Spices

Ingredients

  • 100 g dehydrated jackfruit
  • 2 potatoes
  • 1 cup coriander
  • 3 tablespoons coconut yogurt
  • 1 tablespoon mustard
  • 2 teaspoons pepper
  • 2 teaspoons salt
  • 1 tablespoon chickpea flour
  • olive oil for frying

Preparation

  1. Rehydrate the dehydrated jackfruit in warm water and drain as per packet instructions.

  2. Boil and peel the potatoes.

  3. Add all ingredients to a food processor and blend.

  4. Shape the mixture into fritters.

  5. Fry in olive oil until crispy.
