Vegan Cauliflower Tacos with Fresh Fillings
Ingredients
Roasted cauliflower
- 1/2 large cauliflower
- 1/2 tbsp garlic granules
- 1 tbsp olive oil
- 1/2 tsp smoked paprika
- 4 tbsp hot sauce
Fillings
- 1/2 avocado
- 1/4 red cabbage
- 1 red capsicum
- 2 limes
- Pickled jalapeños
- 6-8 small whole wheat tortillas
- A small bunch coriander
Preparation
Heat the oven to 200C/fan.
Cut the cauliflower into bite-sized pieces.
Tip into a bowl with the garlic granules, paprika, oil, and a pinch of salt and pepper.
Transfer to a baking tray and bake in the oven for 10 minutes.
Drizzle the hot sauce over the cauliflower and return to the oven for another 10-15 minutes.
While the cauliflower is baking, prepare the other fillings by finely slicing the avocado, cabbage, and capsicum, and cut the lime into wedges.
Right before the cauliflower is cooked, wrap the tortillas in foil and heat in the oven for about a minute.
Assemble the tacos with the fillings and cauliflower, add a squeeze of lime, a dash of hot sauce, and garnish with coriander.
Enjoy straight away. This is perfect for a midweek meal; simply prep all ingredients and place into separate bowls for the family to make their own tacos.
Tips
Also works well with hard shell corn tacos.
Feel free to add vegan mayonnaise or guacamole for extra flavor.
