Soft and Fluffy Vegan Cinnamon Rolls
Ingredients
- 2 cups whole wheat flour | 200g
- 5 tbsp flax meal | 50g
- 1/2 tsp baking powder
- 1 tsp instant yeast | 6g
- 1 tsp cinnamon
- 4 tbsp brown sugar | 60g
- 2 tbsp coconut oil | 50g
- 200ml water
Filling
- 1 tbsp coconut oil | 25-30g
- 2 tbsp brown sugar |30g
- 1 tsp cinnamon
Preparation
Mix all the ingredients together.
Let it sit in a warm place to rise for 1 hour.
After 1 hour, the dough should have nearly doubled in size.
Knead the dough lightly, adding additional flour as necessary.
Roll the dough out into a large rectangle and spread the melted coconut oil over the dough.
Sprinkle evenly with brown sugar and cinnamon.
Roll up the dough and cut into 7-8 pieces.
Bake at 360F for about 20 minutes.
