Strawberry Chia Oat Bars Dessert
Ingredients
Strawberry chia filling
- 2 cups fresh or frozen strawberries
- 1/4 cup maple syrup
- 2 tsp arrowroot powder
- 1 tbsp chia seeds
Oat crumble crust
- 1 cup oat flour
- 2 cups GF rolled oats
- 3/4 cup cashew butter
- 1/2 cup maple syrup
Preparation
In a pot, bring the strawberries and maple syrup to a boil. Turn heat to medium and frequently stir while it thickens, about 4-5 minutes.
Add the arrowroot powder and continue to simmer for about a minute.
Remove from heat, stir in the chia seeds and let sit to thicken the mixture further.
For the oat mixture, mix all of the ingredients together well.
Line an 8x8 or 9x9 pan with parchment paper and press a majority of the mix into the pan, leaving enough to crumble on top (about a third of the mix for the top crumble).
Pour the strawberry mixture, spread evenly.
Cover with the remaining crumbles.
Bake at 350 degrees for 30 minutes.
