Stuffed Red Peppers with Cheese and Herbs
Ingredients
- 4-6 sweet red bell peppers (long ones), depending on size
- 250g ricotta
- 150g feta
- 1-2 tablespoons chopped mint or basil
- Juice of 1/2 lemon and zest
- Salt and pepper
- 1 generous handful of kalamata olives
- 1 egg yolk
- Basil for serving
- Olive oil
Preparation
Wash and cut the peppers: make a small cut across the width near the top, then a cut down almost to the end lengthwise. Slightly open the pepper and remove the seeds. Brush it with olive oil by hand.
Mix the stuffing ingredients: pitted and chopped olives, herbs, egg yolk, seasoning, lemon juice and zest.
Add the stuffing to the peppers, drizzle with olive oil on top and bake at 180°C for about 40 minutes.
Notes
Serve with tomato salad and grilled potatoes.
