Stuffed Red Peppers with Cheese and Herbs

Ingredients

  • 4-6 sweet red bell peppers (long ones), depending on size
  • 250g ricotta
  • 150g feta
  • 1-2 tablespoons chopped mint or basil
  • Juice of 1/2 lemon and zest
  • Salt and pepper
  • 1 generous handful of kalamata olives
  • 1 egg yolk
  • Basil for serving
  • Olive oil

Preparation

  1. Wash and cut the peppers: make a small cut across the width near the top, then a cut down almost to the end lengthwise. Slightly open the pepper and remove the seeds. Brush it with olive oil by hand.

  2. Mix the stuffing ingredients: pitted and chopped olives, herbs, egg yolk, seasoning, lemon juice and zest.

  3. Add the stuffing to the peppers, drizzle with olive oil on top and bake at 180°C for about 40 minutes.

Notes

  1. Serve with tomato salad and grilled potatoes.
