Crispy Smashed Potatoes with Herbs

Preparation
Boil the small potatoes in water with a little salt until tender.
Drain the potatoes and arrange them in a baking tray.
Smash the potatoes using a container to flatten them.
Prepare the coating mixture by combining olive oil, mashed garlic, garlic salt, smoked paprika, Italian herbs, and dried parsley.
Coat the smashed potatoes with the mixture.
Garnish with grated Parmesan cheese and sea salt flakes.
Bake in a hot oven from top and bottom until golden and crispy.
Mix the sauce ingredients: labneh, yogurt, tahini, lemon juice, garlic salt, chopped green onion, Italian herbs, and za'atar.
Serve the potatoes with a sprinkle of green onion, wild thyme, chopped chili, Parmesan cheese, and lemon, along with the sauce.
