Spinach Börek with Ready-Made Phyllo
Ingredients
Phyllo and glaze
- 5 sheets ready-made phyllo
- 1 egg yolk
Sauce
- 2 eggs
- 1 cup yogurt
- 1/2 cup olive oil
- 1/2 cup water
Filling
- 500 grams spinach
- 1 onion
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1/2 cup olive oil
Topping
- 1 tablespoon nigella seeds or sesame seeds, optional
Preparation
Preheat the oven to 180°C (350°F).
Sauté the onion in 1/2 cup olive oil until softened, then add spinach and cook until wilted. Season with salt and pepper.
In a bowl, mix together the 2 eggs, 1 cup yogurt, 1/2 cup olive oil, and 1/2 cup water to make the sauce.
Layer the phyllo sheets, brushing each with the sauce and spreading the spinach filling between layers.
Brush the top with the egg yolk and sprinkle with nigella seeds or sesame seeds if desired.
Bake in the preheated oven for 30-40 minutes or until golden brown.
