Easy Turkish Tray Pide

Ingredients

  • 2.5 cups warm water
  • 1 packet instant yeast
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 5.5 cups flour
  • 1 teaspoon baking soda
  • 0.5 cup olive oil

Filling

  • 1 bowl cottage cheese
  • 1 large onion
  • 0.5 bunch parsley

Topping

  • 2 tablespoons oil
  • 1 egg yolk
  • 1 tablespoon yogurt
  • sesame seeds
  • nigella seeds

Preparation

  1. Dissolve yeast and sugar in warm water and let it sit for about 5 minutes until foamy.

  2. Add salt, baking soda, olive oil, and flour to the yeast mixture to form a dough, then knead until smooth and elastic.

  3. Cover the dough and let it rise in a warm place for 30 to 45 minutes until doubled in size.

  4. For the filling, finely chop the onion and parsley, then mix with the cottage cheese.

  5. Preheat the oven to 200°C and grease a baking tray.

  6. Press the risen dough evenly into the prepared tray.

  7. Spread the filling over the dough.

  8. Mix the oil, egg yolk, and yogurt together, then brush this mixture over the top of the pide and sprinkle with sesame and nigella seeds.

  9. Bake in the preheated oven for 20 to 25 minutes until golden brown and cooked through.

Tips

  1. No rolling pin is required; simply press the dough into the tray with your hands.

  2. This pide is very popular and often disappears quickly, so make extra if serving a crowd.
