Turkish Mushroom Pide

Ingredients

  • 1.5 cups warm water
  • 1 cup warm milk
  • 1 tablespoon dry yeast
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1/4 cup olive oil
  • 1 tablespoon vinegar
  • Approximately 5 cups flour

Filling

  • Mushrooms
  • Tomatoes
  • Olives
  • Corn
  • Sausage
  • Salami
  • Green pepper
  • Kasar cheese

Egg wash

  • 1 egg yolk

Preparation

  1. Knead the dough and let it rise.

  2. From the risen dough, tear off small pieces, each about 40 grams; you may not use all of the dough as it can be stored in the refrigerator.

  3. Lightly flour the dough pieces and roll them out with a rolling pin, then place them on a baking tray.

  4. Fill each rolled dough with the filling ingredients and fold the edges inward.

  5. Brush the folded edges with a mixture of egg yolk and a little water.

  6. Bake at 240 degrees Celsius on the bottom rack of the oven.
