The Best Ever Vegan Oreo Cookies
Ingredients
- 200g dairy-free margarine
- 125g soft light brown sugar
- 100g caster sugar
- 1tsp vanilla extract
- 250g plain flour
- 1/2 tsp baking powder
- 1/2 tsp bicarbonate of soda
- pinch of salt
- 1 packet of oreos (approx 16, crushed)
- 2tsp dairy-free milk alternative
Preparation
Preheat the oven to 180degrees ?
Line two baking trays with baking paper
Place the dairy-free margarine, both sugars and the vanilla extract into a bowl
Sift the four, baking powder, soda and salt into the bowl ?
Stir together until thoroughly combined and smooth
Add two big handfuls of crushed oreos and a splash of the dairy-free milk into the bowl and use your hands to work them into the mix ?
Spoon small balls of the mixture out of the bowl, roll into balls and place on the lined baking trays ?
With the leftover oreos, peel away the outside biscuit layers, break in halves and gently press onto each cookie ?
Place in the oven for 8-10 mins, until golden brown ?
Don’t worry if the cookies seem very soft, once removed they will cool and harden
Best served warm (reheating works!) and with a scoop of ice cream
