The Best Ever Vegan Oreo Cookies

Ingredients

  • 200g dairy-free margarine
  • 125g soft light brown sugar
  • 100g caster sugar
  • 1tsp vanilla extract
  • 250g plain flour
  • 1/2 tsp baking powder
  • 1/2 tsp bicarbonate of soda
  • pinch of salt
  • 1 packet of oreos (approx 16, crushed)
  • 2tsp dairy-free milk alternative

Preparation

  1. Preheat the oven to 180degrees ?

  2. Line two baking trays with baking paper

  3. Place the dairy-free margarine, both sugars and the vanilla extract into a bowl

  4. Sift the four, baking powder, soda and salt into the bowl ?

  5. Stir together until thoroughly combined and smooth

  6. Add two big handfuls of crushed oreos and a splash of the dairy-free milk into the bowl and use your hands to work them into the mix ?

  7. Spoon small balls of the mixture out of the bowl, roll into balls and place on the lined baking trays ?

  8. With the leftover oreos, peel away the outside biscuit layers, break in halves and gently press onto each cookie ?

  9. Place in the oven for 8-10 mins, until golden brown ?

  10. Don’t worry if the cookies seem very soft, once removed they will cool and harden

  11. Best served warm (reheating works!) and with a scoop of ice cream
