Vegan Chocolate Almond Butter Biscuits

Ingredients

  • 1/2 cup melted coconut oil or vegan butter
  • 1/2 cup brown sugar
  • 1/2 cup coconut sugar
  • 1 tsp vanilla essence
  • 1 cup cacao powder
  • 1 1/2 cups spelt flour
  • 1 tsp bicarbonate of soda
  • 1/4 tsp Himalayan sea salt
  • 1/2 cup almond butter
  • 2 Tbsp coconut cream
  • 2 Tbsp coconut milk
  • A small slab of dark chocolate, chopped

Preparation

  1. Preheat the oven to 170°C and line a baking tray

  2. Mix the melted butter or oil, sugars, and vanilla essence together in a bowl

  3. Add all the other ingredients and make sure there are no lumps

  4. Roll out dough balls and flatten them a bit

  5. Bake for 8-10 minutes
