Pumpkin Brownies with Almond and Cacao

Ingredients

  • 2 cups cooked and mashed butternut or pumpkin
  • 1/2 cup almond flour
  • 1/2 cup almond or macadamia nut butter
  • 1/3 cup cacao powder
  • 1 tablespoon vanilla essence
  • 1/3 cup coconut sugar
  • 1/4 cup chopped mint chocolate

Preparation

  1. Preheat the oven to 150°C and line a baking tin.

  2. Mix all the ingredients together except the chocolate.

  3. Pour the batter into the tin and then mix the chocolate through.

  4. Bake for 20 minutes.

  5. If desired, drizzle melted chocolate over the top.
